If you are anything like me, you have a hard time deciding what to have as a side with dinner. After all you just spent a ton of time on the main course so you don’t want a side that is going to take just as long or longer. I have come up with the perfect mixed veggie recipe that steams them, which is the best way to cook veggies as it retains all the good stuff in them and it is so tasty even the kids will ask for more. This side only takes mins to make and is oh so easy only using a few ingredients.
- 2 cups of mixed veggies
- 1 tablespoon of lemon juice
- 1 tablespoon of extra virgin olive oil
- 1 teaspoon of garlic
- 1/4 teaspoon of pepper
Place 3 tablespoons of water into a sauce pan on the stove on low or med low heat; place the vegetables in the sauce pan. Put lid on top and steam for about 20 mins or until tender. Remove from heat and mix in the lemon juice, olive oil, garlic and pepper. Serve hot.
