It is finally fall!! The leaves are falling off the trees, it is getting cooler out, and it is pumpkin season. Nothing is better then the smell and taste of pumpkin pie spice on a crisp autumn day. I originally came up with this recipe because my boyfriend is trying to live a more healthy , clean eating lifestyle and he loves snacking on nuts, he also loves pumpkin spice everything. So I decided to try to combine his 2 favorite things, that way he can continue on his clean eating journey , but have a nice little sweet pumpkin spice treat. You can use whatever nuts you want in this recipe, I used almonds and cashews , but any nut will do. It is pretty simple to make and will last about 2 weeks in an air tight container.
- 2 teaspoons of pumpkin pie spice
- 1/4 teaspoon of sea salt
- 1/2 cup of organic raw honey or maple syrup
- 1 egg
- 3 cups of nuts (almonds,cashews, peanuts etc.)
In a large bowl combine spices, salt, honey and egg until well combined.
Add the nuts and stir until coated well.
Line a large baking sheet with either foil or waxed paper and spread the nut mixture onto the pan. Bake the nuts at 300 degrees for 1 hour.
Remove from oven and allow to cool completely before storing in an air tight container. Makes 3 cups.
