I said this before when I wrote Baked Pork Chops with Apples , I love combining meat and fruit together. Something about how sweet fruit is and the spices with meat just drives me wild. Ok Ok this is starting to get weird. LOL Anyways, I took a classic recipe and modified a few things to create a tasty, clean eating, Pineapples and Chicken recipe. This has to be a close second fav. of mine as the sauce is nice and thick and just sticks to the chicken. While the pineapple give the dish a nice sweet, juicy taste. This dinner I think is best served over steamed brown rice and broccoli, but can be paired with anything you like.
- 2 boneless chicken breast sliced into strips
- 2 cups of frozen pineapple chunks
- 1 1/2 cups of pineapple juice
- 2 tablespoons of low sodium soy sauce
- 1 tablespoon of honey or stevia
- 1 teaspoon of minced garlic
- 1 teaspoon of cinnamon
- 1/4 teaspoon of ginger
- 1 tablespoon of corn starch
Cut your chicken into strips and place in a casserole baking dish, sprinkle with salt and pepper. In a sauce pan on med-hi heat on the stove combine the juice, soy sauce, honey, garlic, cinnamon and ginger. Once mixed well add the corn starch, stir until sauce starts to boil. It will thicken as it does, keep stirring until it is thick, add the pineapple. Turn off heat and pour the whole mixture over the chicken. Bake at 375 for 35-40 mins basting every 15mins or so. Serve hot. Try it over steamed rice or add my garlic and ginger steamed broccoli to make a complete meal.
