Like most people we need something in the mornings we can just grab and go. When trying to live an organic and clean eating lifestyle that isn’t always easy. I have made these little omelet cups many of times, easy to make and great to eat on the go. You can add whatever kind of veggie you would like, in this one I use spinach.  Top it off with a little shredded cheese you have just created an all in one breakfast you won’t feel guilty about.

 

  • 6 eggs
  • 1/4 cup chopped spinach
  • 1/2 cup shredded cheddar cheese
  • sea salt and pepper to taste

In a large bowl beat the eggs, add salt and pepper. In your greased muffin tin divide the spinach and add it in the center of 6 cups.  Pour the egg mixture over the spinach and sprinkle the cheese on top.

Place in the oven at 350 for about 15-20 mins.  Serves 6

Protein packed, veggie filled all in one clean eating breakfast you can just grab and go.  Feel free and get creative. Add salsa, different types of cheese, organic bacon the possibilities are endless on what you can make. These last about 3 days in the fridge and can just warm up in seconds.

  1. This looks delicious, and perfect to microwave in the morning on a busy school day. I always try to get my kids a bit of protein each morning, so this, along with a couple of slices of organic bread would be great. Plus, it looks super easy to do. I am personally trying to lose a few pounds so i would probably lessen the amt of cheese, but i bet it will be delicious regardless.

    • These are perfect for that. School mornings are very busy we just take out warm up for a few seconds and be on our way. You can do whatever you like with this recipe, so you can try something different everyday. Thank you!!

  2. I love this idea! My boyfriend has a busy week coming up at work so I’m going to make these for us so we can grab and go. We don’t have much time in the morning but we always try to at least get something healthy in our bodies before we start our day. I look forward to trying them!

  3. Wow, it looks so cute! How amazing to start a day with this little egg cup! I really love eggs, there are cheap but nutritious. I usually make asian style steamed water eggs and custard at home, but l never know omelet cup. Your recipe is absolutely delicious and seems like not that difficult. I decide to give it a try tonight!
