Fall is my favorite time of year. The leaves are falling down, there is a nice chill in the air. Everything about the fall season is just so perfect. One thing about fall I love more then anything is all the creative cooking we can do. It is finally cool enough to turn that oven on. I have created the perfect clean eating Pumpkin Waffles recipe. It taste just like pumpkin pie, but it is good for you. I always triple this recipe so I have some I can store in the freezer for quick morning breakfast. These can be served any way you desire, but my kids love to mix Greek Yogurt and pecans together and put a spoonful on top of the waffles. Makes you feel like you are eating a desert, but in fact staying right on track to your health goals.
- 1 cup of whole wheat pastry flour
- 1/2 cup of oatmeal
- 3 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 3 teaspoons of pumpkin spice seasonings
- 2 eggs
- 1/4 cup of stevia or maple syrup
- 1 cup of pumpkin puree
- 1 cup of milk, butter milk or plain greek yogurt
In a large bowl mix all dry ingredients together well; in a smaller bowl mix all wet ingredients together well, slowly add the wet into the dry, stir together until a thick batter is made.
I usually have 2 waffle irons going at once so I can quickly make a bunch of these tasty creations to store in the freezer for a good grab and go breakfast or can enjoy as a desert.
