Healthy Morning Glory Muffins


As I have mentioned before we love muffins in this house.  They are easy to make, freeze well and make great quick, grab and go breakfast in the mornings.  What I really love about these muffins is they are a great all in one muffin.  You have whole grains which gives you energy that last the whole day, good fats from the extra virgin olive oil, they have fruits and veggies in them, you all know how I love to sneak veggies into our food and protein from the eggs; want a little added protein you may add some chopped nuts.  In my humbling opinion these are a great all-in-one breakfast idea.  I have adapted a few ingredients in this recipe so it is clean and organic.  Just because you don’t have a lot of time doesn’t mean we can’t still live a clean eating and organic lifestyle.  Oh and did I mention they taste great.  I always have to double the recipe because my kids eat them up as soon as they leave the oven.  I often make a variety of muffins and freeze them.  The night before I take a few different kinds out and pop them in the fridge.  The next morning they are ready to grab and go, you may warm them up for a few seconds if you prefer too.

  • 2 over ripped bananas
  • 1 apple , shredded
  • 2 med sized carrots, shredded
  • 2 eggs
  • 1/3 cup of maple syrup
  • 1/3 cup of extra virgin olive oil (may replace with coconut oil if you prefer)
  • 2 teaspoons of cinnamon
  • 1 teaspoon of nutmeg
  • 1/2 teaspoon of ginger
  • 1 teaspoon of vanilla extract
  • 1 cup of whole wheat flour
  • 1 cup of whole wheat pastry flour
  • 2 teaspoons of baking powder
  • chopped walnuts, pecans, almonds, etc *optional

In a bowl mash the bananas , grate the apples and carrots then mix together.  I cut them in half and just use a cheese grater to grate them down.  Add the eggs, olive oil, syrup, vanilla mix well. 


Add the spices, baking powder and flour in the wet mixture all 1 at a time.  If you decide to add nuts, mix them in at this time.   Once mixed well place into a greased muffin tin. Bake at 350 for 25mins makes 24 muffins.
