Healthy Coffee Cake Muffins

We love muffins in our home.  They are just perfect grab and go breakfast for busy school mornings.  We especially love muffins that have cinnamon in them.  Cinnamon has such a wonderful flavor, it can be put into almost anything and it will taste great.  Any recipe that uses cinnamon as the main spice is a winner in our house.  A lot of coffee cake muffins recipes call for white flour, white sugar and a lot of butter.  As we know those are no, no’s when living a clean eating, organic lifestyle. I have adapted this recipe so not only do you feel like you are eating a dessert for breakfast, but also staying on your clean eating journey. 




  • 2 cups of whole wheat pastry flour (this one is my favorite to use)
  • 1 egg
  • 3/4 cup of brewed coffee
  • 1/4 cup of maple syrup
  • 2 teaspoons of baking powder
  • 2 teaspoons of cinnamon
  • 1 teaspoon of nutmeg

The topping

  • 1/4 cup of oatmeal
  • 1/4 cup of stevia
  • 2 teaspoons of cinnamon
  • 1 tablespoon of extra virgin olive oil

In a large bowl mix all the dry ingredients together; add coffee, syrup and egg.  In another bowl mix together oatmeal, stevia and cinnamon, drizzle the olive oil over the top and with a fork mix to combine.  In a greased muffin tin add the muffin batter to be even with the top, sprinkle the topping onto the muffins.

Bake at 350 for 25 mins.  Makes 24 muffins.
