Greek Oven Roasted Lemon Butter Parmesan Potatoes


Not to toot my own horn, ok ok yeah let me toot my own horn, toot toot! I am pretty good with the recipes I create in my kitchen and turning traditional non-healthy versions of food into super healthy versions. I am pretty stuck in my ways, but once I met my super amazing boyfriend who happens to be Greek, opened up a whole new world for me! The Greek culture not only has some amazing food, but there is nothing I have to change in the recipes. Everything is already healthy, organic and most important clean! Yes,those tasty little creations are all clean eating foods! The more I asked questions the more I learned how Greek recipes are the best when trying to live a clean, healthy lifestyle without sacrificing taste! Today I will be teaching you how to create not only a wonderful side your whole family will love, but also good for you!!

  • 4 medium to large russet potatoes or 10 small potatoes diced up
  • 1 cup of chicken broth
  • 2 Tablespoons of lemon juice
  • 1/4 cup of melted butter
  • 1 teaspoon of oregano or Greek oregano
  • 1 Tablespoon of fresh minced garlic
  • salt and pepper to taste
  • 3/4 cup grated parmesan cheese
  • chopped parsley

Pre-heat oven to 375; grease your baking dish with butter, place cut up potatoes in the pan. In a bowl combine the remaining ingredients minus the cheese and parsley, mix well. Pour over the potatoes and stir to coat. Cover the dish with foil and bake for 40mins. Uncover and turn the potatoes. Sprinkle half the parmesan cheese and parsley over the top and return to the oven uncovered for another 25mins.  Remove from oven and sprinkle with remaining cheese and parsley.  Serves about 5 people.
