Ahhh I love the fall. This is truly my favorite time of year. The leaves are changing, the air is cooler , the smell of pumpkin and apples fill the air. I seriously could have fall all year long and be happy. Now, what if I told you, you could have the sweet taste of pumpkin pie on your morning toast? Think I am crazy, huh? Well, it is true. My clean eating pumpkin butter recipe taste just like pumpkin pie, but the best part is it is all clean. This recipe is great on toast, waffles, in oatmeal, even in yogurt.
- 2 15 ounce cans of pumpkin puree (not pumpkin pie filling.)
- 1 cup of Apple Cider
- 1/2 cup of maple syrup
- 1/2 cup of organic brown sugar
- 1 tablespoon of pumpkin pie spice
In a large sauce pan mix all the ingredients together. Make sure they are all mixed well. Set on med-high heat and bring to a boil, while mixing. It will bubble up and splash over if you don’t. Once brought to a boil, reduce heat and allow to simmer for 30mins or until thick. Stir every so often to make sure it doesn’t burn, place a lid with a steam vent on top so there are no worries about it bubbling over on to your stove top. Once thick, turn off heat and allow to cool down before moving it to the fridge.
***Crock pot version**** Add all the ingredients to the slow cooker, mix well. Cook on low for about 6 hours. You will have to stir it several times to make sure it doesn’t stick. After, take the lid off and allow to cool down. Store in an air tight container in the fridge.
