Nothing is better or more satisfying then a nice bowl of soup. Sadly, a lot of the soups out there are not organic or clean. Full of sodium, preservatives, dyes and other artificial ingredients , we quickly weep thinking we will never be able to enjoy soup again. I have taken a traditional, classic recipe and revised it so not only is it organic, but it is clean. This recipe is made in a slow cooker, but can be done on the stove top. Also, freezes really well for easy single serve storage for future meals. I recommend using pyrex storage dishes when storing the soup. They are glass, not plastic, so no BPA, they will not crack and can be taken out to pop in the microwave or oven for quick reheating.
- 1 lb of organic ground beef
- 1 tablespoon of garlic
- 1 teaspoon of oregano
- 1/4 teaspoon of thyme
- 1/4 teaspoon of rosemary
- 1/4 teaspoon of marjoram
- 1/2 teaspoon of basil
- 1/2 teaspoon of parsley
- 1 tablespoon of worcestershire sauce
- 1 tablespoon of dijon mustard
- 1 egg
- 1/4 cup of whole grain bread crumbs or take 1/2 cup of old fashion oat meal and blender in your blender until a flour is made.
- 1 onion diced up
- 1 cup of chopped spinach
- 6 cups of chicken broth
- 1 16 oz box of whole wheat shell pasta
Take the meat, all the spices, garlic, egg, mustard , worcestershire sauce and bread crumbs and place in a bowl. Mix well; take little pieces of the mixture at a time and roll into balls, place in baking dish and bake for 25mins at 375 . While the meatballs are cooking in your slow cooker add the chicken broth, diced up onion and spinach, mix well. Once the meatballs are done place them into the slow cooker and set it on low to cook for 6 hours or medium for 4 hours. If cooking on the stove top place in a large sauce pan , cover with a lid and allow to simmer on low to medium low heat for 2 hours. 1 hour before soup is set to be done add the pasta and continue to cook for the remaining hour. Serve warm makes 6 servings.
