Easy Herb and garlic potatoes


You know what you want to make for dinner, but have no idea what to have with it? How about tasty oven roasted potatoes?! This healthy, clean eating recipe is relatively inexpensive to make and pretty simple. These oven roasted potatoes pair well with just about any dish you are making.

  • 4 medium to large potatoes cut up into cubes
  • 1/4 cup extra virgin olive oil
  • 1/4 teaspoon of thyme
  • 1/4 teaspoon of rosemary
  • 1/4 teaspoon of basil
  • 1 teaspoon of oregano
  • 1/2 teaspoon of parsley
  • 1/4 teaspoon of marjoram
  • 1.5 teaspoons of paprika
  • 1 teaspoon of chili powder
  • 2 tablespoons of garlic
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper

Peel, rinse and cube up your potatoes; place in glass baking dish.  Add all the herbs and spices to the potatoes, stir to even coat the potatoes. Add the olive oil, stir to coat. Bake at 425 Stir potatoes every 10 mins 3 times (a total of 30mins has passed) then allow to bake untouched for the remaining 20-25mins.

  1. I love cooking and potatoes are one of my favorite side dishes so I’m super stoked to have found your recipe here! Potatoes can get boring too and I love using fresh herbs when I cook. I can’t wait to make these with a steak! Could I try this recipe with red bliss potatoes instead?

    • Hey! Thank you, we love potatoes as well and I always make these with steak! Yes you can. You can make this with any kind of potato you prefer. I used regular old Idaho potatoes, but any kind is fine. Let me know how they turn out for you.

  2. Absolutely one of my favourite dishes – but I must confess, I usually buy them ready prepped from the supermarket and then just pop them in the oven.

    Now that I see how easy they are to make, I might just make them from scratch in future. I’ll save a little money – plus I’ll be able to adjust the herbs and seasonings a bit. Everybody in my house loves extra garlic!

  3. Hi, thank you very much for sharing this simple yet delicious recipe. I think for people that has very little talent in cooking like me, this easy to follow recipe will guide me to complete the dish. However, may I ask though, when you mentioned the herbs, does it means dry or fresh herbs? What is the difference? Can I use both or this recipe need me to use the specific type?

    • thank you! You can use dry or fresh herbs or mix and match. If using fresh just double the amount of using dry just keep the measurements the same.
