My kids and I love Greek yogurt. It is perfect for everything. A substitute for sour, heavy cream while cooking, add a few things and it becomes a sweet treat, great grab and go breakfast on busy mornings, a satisfying snack and the list goes on and on. Full of protein and gut healthy bacteria Greek yogurt is a super star. The only problem is it can be so expensive and if you want it organic it can be even more expensive. My family and I can easily polish off 6 quarts in a week. EKKKK can you say expensive?! That’s when I decided I was going to make my own. Individual fruit and yogurt cups can easily go for a 1.00 or more per cup in the stores and if you read the label more times then not it is full of artificial flavors and fillers. With just a few simple steps I will show you how to make your own individual fruit and yogurt cups for half the cost of store bought, clean and organic and the best part you control what you put in it. Life doesn’t get better than this.
- 6 cups of greek yogurt
- 2 cups of organic frozen fruit, any kind you like I used mixed berries and pineapple
- 1/4 cup of stevia or 2 tablespoons of organic raw honey
In a sauce pan on med-low heat add the frozen fruit. We aren’t trying to cook the fruit here so please don’t turn the heat up higher then that; add your stevia and mix well. Continue mixing and using the spoon to cut up the fruit to make smaller chunks for about 15mins or until a syrup is formed from the juices.
Once that is done let cool down, you may put in the fridge or freezer to cool down quicker. Get 8, 8 oz containers I use mason jars as they are reusable and durable. Take 1 spoonful of fruit mixture and place in jar, take 2 spoon fulls of Greek yogurt and place on top of fruit mix, take another spoon full of fruit and place on top of that, repeat the process until all containers are full.
Place lids on and store in the fridge. They will keep for about 1 week so only make what you will use in a week. This makes 8 cups.
