Who doesn’t love one pan meals? I know I do, after working all day, cleaning the house, chasing after four kids, I need something quick. Just because you are pressed for time doesn’t mean you can’t eat clean and organic. My family really loves this meal as it is creamy, has the wonderful flavor of garlic and who doesn’t love pasta. You can choose to use your own homemade pasta or a 16 oz box of organic whole wheat pasta. In the directions I will explain the variations to use for homemade pasta vs. boxed pasta. This whole meal takes 30 mins to complete and I find it best paired with steamed broccoli. This serves about 5 people.
- 1 large chicken breast cut up into cubes
- 2 cups of organic milk
- 1 large garlic clove or 1 1/2 tablespoons of minced garlic
- 1 teaspoon of parsley
- 1 tablespoon of corn starch
- sea salt and pepper to taste
- 16 ozs of whole grain pasta
In a large skillet cook the chicken cubes with 2 tablespoons of olive oil until cooked throughly.
In a bowl mix the corn starch into the milk until completely dissolved; pour the mixture into the pan with the chicken still in the pan.
Mix on medium heat until it starts to boil. Once it boils add the garlic, parsley and sea salt; add the pasta. Turn down the heat to med- low or low and allow to simmer for 5 mins if using homemade pasta and 10 mins if using dried boxed pasta.
Serves 5 garnish with shredded parmesan cheese if desired.
