Clean Eating Chicken and Dumplings


Chicken and Dumplings is a classic.  I remember growing up my grandmother made it every Sunday in the fall and winter.  Just the smell brings back so many memories of happier, simpler times.  I will be showing you different ways you can make this wonderful, hearty, clean eating recipe. Whatever version you decide to try, I know it will be great.  This meal is full of so many super foods to build up your immune system.  No, flu this year.  The dumplings are made with whole wheat pastry flour, we got carrots, onions and spinach.  A truly great meal to help ward off illness.  The best part is it is all clean and organic. You know we love that! Let’s get started.

  • 1 whole chicken
  • 4  large carrots chopped up
  • 2 cups of spinach
  • 1 onion cut up
  • 2 tablespoons of minced garlic
  • 1/2 teaspoon of rosemary
  • 1/2 teaspoon of oregano
  • 1/2 teaspoon of basil
  • 1/4 teaspoon of sea salt and pepper
  • 10 cups of water
  • 2 cups of whole wheat pastry flour
  • 1 cup of milk
  • 3 tablespoons of organic butter
  • 1 Tablespoon of baking powder

As I said I will will be showing you how to make this meal 2 different ways. Method 1: Place the whole chicken breast up in a roasting pan. Drizzle 1 tablespoon of olive oil over the chicken and 1 cup of water. Pre heat the oven to 450 , after the oven as reached that temp. place the pan on the lowest rack and reduce heat to 400; cook for 50mins covered.  Check the temp of the chicken to make sure the thickest part has reached 165 degrees , if it has not put back in the oven for 10 more mins. and check again.  A whole chicken can take anywhere from 50 mins. to 1 1/2 hours to full cook.  Once the chicken is done, pull all the meat off of it and place in a large soup pot or a slow cooker.  Take the juices from the roasting pan and add it to the pot.  Add remaining water, herbs, spices and veggies to the pot, add 1 chicken bouillon cube.  Simmer on the stove top uncovered for 2 hours.  If you are using a slow cooker, put it on the med. setting and allow to cook for 3-4 hours.  In a large bowl mix together the whole wheat pastry flour and baking powder.  Melt the organic butter and pour into the flour mixture with the milk.  Stir until a soft dough is formed.  Take pieces of the dough and roll them into 1 inch balls, place into the soup.  You want to make the dumplings after the soup has been cooking either stove top 2 hours or slow cooker 3 hours.  Allow to cook for another 1 hour. 




Method 2:  In a large soup pot add all the water, herbs, spices and chicken; cook on the stove top at med heat uncovered until the chicken falls off the bone.  With a slotted spoon take the chicken out and place on a plate.  Remove all the bones; place meat back in the pot, add the veggies .  Allow to simmer for 2 hours.  If you would like to use a slow cooker after the meat is taken out and de boned place the water from the pot, meat and veggies in the slow cooker and cook on med heat for 3-4 hours.  Make the dumplings as stated in method 1 and cook an additional 1 hour.  Makes about 6 servings.
