If you are anything like me , you have this constant debate inside your head. You want to be healthy, you want to eat clean, you want to eat organic, but you also want food that taste good. Food that makes your mouth water and your taste buds dance for joy. You want something that satisfies you and makes you feel good. Yeah, I have that problem a lot. What if I told you, you could give into your cravings, but still live a clean eating, organic lifestyle….. Sound too good to be true? Well it isn’t! When I first started my clean eating, organic journey I was 300lbs, unhealthy, tired all the time and sick. I couldn’t keep up with my kids, my housework, I felt useless. I wanted to change my life, lose weight and feel good. One little problem, where I am from food is everything. We celebrate food and enjoy it like it is a national holiday. Like many of you out there, we still want that good, but not so good for you food. That is when I started my mission. Create good food that taste like it is not so good for you , but actually is. I have played around and created a lot of delicious recipes that make you feel good (in a bad way) but are actually good for you. Since then I have lost 100lbs, have more energy, feel great again and now I want to help others’ out there just like me. That way of thinking, if it is clean and organic it won’t taste good, out the window. My Cheesy Chicken Bacon Ranch Stromboli recipe uses organic bacon, organic chicken breast, organic whole wheat flour , Extra virgin olive oil and organic ranch seasonings. There isn’t anything that goes into this recipe with names you can not pronounce. True definition of clean eating. You can break up the dough to make smaller Strombolis to freeze for quick and easy meals. This recipe makes 2 large size ones, 1 stromboli makes about 5 servings.
- 1 and 1/2 cups of water
- 2 teaspoons of yeast
- 1/4 cup of wheat germ
- 2 cups of whole wheat flour
- 1 and 1/2 cups of whole wheat pastry flour
- 2 chicken breast
- 1 lb of bacon
- 2 tablespoons of extra virgin olive oil
- 1 packet of organic ranch seasonings (leave 1 teaspoon reserve to sprinkle on top of dough)
- 1 cup of cheddar cheese
Place the water and yeast in the bowl of the stand mixer and allow to sit for 5 mins; add wheat germ, start the stand mixer on the low setting to start mixing. Add the flour 1 cup at a time, when the last cup of flour is added allow the mixer to knead until a soft dough is formed , you do not want a hard dough or sticky dough. On a cookie sheet place the chicken breast in the oven at 400 for about 30 mins to cook. Cut up the bacon to make small pieces and cook in a skillet on the stove top til the bacon is about half way done. After the chicken is done cooking to 165 degrees (using a meat thermometer) or the juices run clear take it out and shred the chicken. You can use 2 forks to do this, a shredding tool or simply place the chicken breast in the bowl of your stand mixer using the batter attachment and turn on low. Believe it or not the stand mixer shreds the chicken fast and evenly. After the chicken is Shredded at the olive oil and ranch seasoning, mix well. Take your dough and divide it into 2 pieces. Lightly grease your counter top and roll out 1 of the dough pieces to form a long and wide rectangle. Sprinkle the chicken, bacon and cheese all over the dough.
Starting from the top, the long end, carefully roll the dough over like you are trying to roll up a news paper. Take the ends and fold them over, and pinch the seals shut. Lay on a greased cookies sheet, seam down.
Brush the top of the stromboli with 1 tablespoon of olive oil and sprinkle 1 teaspoon of the ranch seasonings over the top. In a preheated oven bake at 425 for 13mins.
I like to start baking the chicken as I make the dough, that way by the time the chicken is done so is the dough. Just a little tip.
