Are you ready for the easiest muffin recipe you will ever make?! Not only is it flour free, it is sugar free and only takes 3 ingredients to make. My kids are obsessed with these little things , they think they are getting a sweet treat, when really they are getting a protein packed, fruit filled, healthy clean eating breakfast. They are perfect as you can make them the night before and just store in the fridge for the next morning. They will keep for up to a week in the fridge in an air tight container.
- 4 over ripe bananas
- 4 eggs
- berries of choice. I did strawberries
Mash your bananas in a bowl with a fork.
In another bowl beat 4 eggs; add the beaten eggs to the bananas. Stir well.
Grease a muffin tin and place your berries of choice in the bottom of the tin.
Pour the egg, banana mixture over the top of the fruit until level with the opening of the muffin tin.
Bake at 350 for 15 min using fresh fruit 20 mins for frozen fruit. Makes 24 muffins.
